American Shrimp Fried Rice with Chili Fish Sauce

Ingredients for Shrimp Fried Rice:

  • 2 cups cooked rice (preferably cooled)
  • 1 cup shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup mixed vegetables (such as carrots, peas, and corn)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Ingredients for Chili Fish Sauce:

  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 2 red chili peppers, thinly sliced

Instructions:

  1. Prepare the chili fish sauce by mixing fish sauce, lime juice, sugar, minced garlic, and sliced red chili peppers in a bowl. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and cook until fragrant.
  3. Add shrimp and cook until they turn pink and opaque. Remove from the skillet and set aside.
  4. In the same skillet, add beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
  5. Add mixed vegetables to the skillet and stir-fry until they are tender-crisp.
  6. Return the cooked shrimp and eggs to the skillet. Add cooked rice, soy sauce, oyster sauce, and fish sauce. Stir-fry until everything is well combined and heated through.
  7. Season with salt and pepper to taste.
  8. Transfer the shrimp fried rice to serving plates. Garnish with chopped green onions and sesame seeds.
  9. Serve hot with chili fish sauce on the side.
