American Shrimp Fried Rice with Chili Fish Sauce
Ingredients for Shrimp Fried Rice:
- 2 cups cooked rice (preferably cooled)
- 1 cup shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup mixed vegetables (such as carrots, peas, and corn)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Ingredients for Chili Fish Sauce:
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 2 red chili peppers, thinly sliced
Instructions:
- Prepare the chili fish sauce by mixing fish sauce, lime juice, sugar, minced garlic, and sliced red chili peppers in a bowl. Set aside.
- Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and cook until fragrant.
- Add shrimp and cook until they turn pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add beaten eggs and scramble until cooked through. Remove from the skillet and set aside.
- Add mixed vegetables to the skillet and stir-fry until they are tender-crisp.
- Return the cooked shrimp and eggs to the skillet. Add cooked rice, soy sauce, oyster sauce, and fish sauce. Stir-fry until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Transfer the shrimp fried rice to serving plates. Garnish with chopped green onions and sesame seeds.
- Serve hot with chili fish sauce on the side.
