Linzer Cookies with Cherry Jam Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry jam
  • Confectioners' sugar, for dusting

Instructions:

  1. In a medium bowl, whisk together flour, cinnamon, and salt. Set aside.
  2. In a large mixing bowl, beat together butter and granulated sugar until light and fluffy.
  3. Add egg and vanilla extract to the butter mixture, and beat until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one disk of dough on a lightly floured surface to about 1/8-inch thickness.
  8. Using a cookie cutter, cut out rounds from the dough and transfer them to the prepared baking sheets.
  9. Using a smaller cookie cutter, cut out centers from half of the rounds to create the top cookies.
  10. Bake in preheated oven for 10-12 minutes, or until edges are lightly golden.
  11. Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  12. Once cooled, spread cherry jam on the bottom cookies and sandwich them with the top cookies.
  13. Dust the tops of the cookies with confectioners' sugar before serving.
