Linzer Cookies with Cherry Jam Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup cherry jam
- Confectioners' sugar, for dusting
Instructions:
- In a medium bowl, whisk together flour, cinnamon, and salt. Set aside.
- In a large mixing bowl, beat together butter and granulated sugar until light and fluffy.
- Add egg and vanilla extract to the butter mixture, and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out one disk of dough on a lightly floured surface to about 1/8-inch thickness.
- Using a cookie cutter, cut out rounds from the dough and transfer them to the prepared baking sheets.
- Using a smaller cookie cutter, cut out centers from half of the rounds to create the top cookies.
- Bake in preheated oven for 10-12 minutes, or until edges are lightly golden.
- Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- Once cooled, spread cherry jam on the bottom cookies and sandwich them with the top cookies.
- Dust the tops of the cookies with confectioners' sugar before serving.
