Telangana-Style Spicy Chicken Curry

Ingredients:

  • 500g chicken, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a large pan or pressure cooker over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  2. Add chopped onions and green chilies. Sauté until onions turn golden brown.
  3. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
  4. Add chopped tomatoes and cook until they turn mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for 2-3 minutes.
  6. Add chicken pieces to the pan and mix until they are well coated with the spice mixture.
  7. If using a pressure cooker, add 1/2 cup of water. Close the lid and pressure cook for 2 whistles or until the chicken is cooked through. If using a pan, cover and cook the chicken until tender, stirring occasionally and adding water if needed.
  8. Once the chicken is cooked, check for seasoning and adjust if necessary.
  9. Garnish with fresh coriander leaves and serve hot with rice or roti.
