Telangana-Style Spicy Chicken Curry

Ingredients:
- 500g chicken, cleaned and cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste)
- 1 tablespoon coriander powder
- 1 tablespoon ginger-garlic paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a large pan or pressure cooker over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Add chopped onions and green chilies. Sauté until onions turn golden brown.
- Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add chopped tomatoes and cook until they turn mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook the spices for 2-3 minutes.
- Add chicken pieces to the pan and mix until they are well coated with the spice mixture.
- If using a pressure cooker, add 1/2 cup of water. Close the lid and pressure cook for 2 whistles or until the chicken is cooked through. If using a pan, cover and cook the chicken until tender, stirring occasionally and adding water if needed.
- Once the chicken is cooked, check for seasoning and adjust if necessary.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
