Aloo Gobi: Chef Priya & Chef Nisha's Easy-Peasy Comfort Recipe!
Chef Priya: "So, Chef Nisha, today I’m feeling a little under the weather. Can we make something warm, comforting, and super easy?"
Chef Nisha: "Of course, Priya! How about Aloo Gobi? It’s a perfect comfort food — simple, warm, and healthy! You’ll feel better in no time!"
Chef Priya: "I love Aloo Gobi! It’s like a hug in a bowl. But tell me, how do I get the perfect texture for the potatoes and cauliflower?"
Chef Nisha: "Great question! The key is to cook the potatoes and cauliflower just right. We want them soft, but not mushy. The trick is to cook them separately before adding them to the masala. Let’s get started!"
Ingredients:
- 2 medium-sized potatoes, peeled and chopped into cubes
- 1 medium-sized cauliflower, cut into florets
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 tbsp coriander powder
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish

Chef Priya: "Alright, Nisha, I’ve got all the ingredients. What’s first?"
Chef Nisha: "Great! First, heat the oil in a pan, and let’s add the cumin seeds. When they splutter, toss in the chopped onions and sauté them until golden brown."
Chef Priya: "The aroma is already making me feel better! What next?"
Chef Nisha: "Now, add the ginger-garlic paste and sauté it for about 30 seconds until the raw smell disappears. Then, toss in the pureed tomatoes, turmeric powder, red chili powder, and coriander powder. Let it cook until the oil separates from the masala."
Chef Priya: "I’m getting hungry just listening to you! So, once the masala is ready, we add the potatoes and cauliflower?"
Chef Nisha: "Yes! But, here’s the trick — cook the potatoes and cauliflower separately. In a separate pan, cook the potatoes until they’re just soft, and steam the cauliflower until it’s tender. We don’t want them overcooked or mushy."
Chef Priya: "Got it! So we add them to the masala after they’re done?"
Chef Nisha: "Exactly! Add them to the masala, and mix gently. Let it cook for another 5 minutes so the flavors can really soak in."
Chef Priya: "I love how easy this is! And, it smells incredible. Are we done yet?"
Chef Nisha: "Almost! Now, add garam masala and salt to taste. Give it one last stir and let it simmer for 2 minutes."
Chef Priya: "It’s looking so good! Can we garnish it with coriander?"
Chef Nisha: "Absolutely! Finish with a sprinkle of fresh coriander leaves, and your Aloo Gobi is ready to serve!"
