Asian-Style Chicken with Rice & Fresh Coriander
Welcome to another exciting recipe here on Kumaraswamy's blog! Today, we're making a vibrant and aromatic Asian-Style Chicken with Rice & Fresh Coriander, inspired by the bold flavors of Thai cuisine. This dish features tender chicken, fragrant rice, and a zesty coriander garnish, bringing together the best of Thai cooking in your kitchen. Let’s get started!
Ingredients
- 500g Chicken thighs or breasts, boneless and skinless, cut into bite-sized pieces
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (for an authentic Thai flavor)
- 1 tablespoon honey or brown sugar
- 2 tablespoons lime juice
- 1 tablespoon fresh grated ginger
- 3 garlic cloves, minced
- 1 teaspoon chili flakes or 1-2 fresh Thai red chilies, sliced (adjust to your spice preference)
- 1 tablespoon sesame oil (for stir-frying)
- 1 cup jasmine rice (or basmati rice)
- 1 cup water or chicken broth (for rice cooking)
- Fresh coriander leaves, chopped (for garnish)
- 1 small cucumber, thinly sliced (optional, for serving)
- Salt and pepper to taste
Instructions
- Start by cooking the rice: Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice and 1 cup of water or chicken broth. Bring it to a boil, reduce the heat, cover, and simmer for 15-18 minutes, or until the rice is tender and fluffy. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
- Meanwhile, prepare the chicken: In a large bowl, combine the chicken pieces with soy sauce, fish sauce, honey, lime juice, grated ginger, garlic, and chili flakes. Toss the chicken well and let it marinate for 15-20 minutes to absorb the flavors.
- Heat sesame oil in a large pan or wok over medium-high heat. Once the oil is hot, add the marinated chicken pieces and stir-fry for 8-10 minutes, or until the chicken is fully cooked and golden brown on the outside.
- While the chicken is cooking, keep stirring to ensure it cooks evenly. If the pan gets too dry, you can add a little bit of water or chicken broth to create a light sauce. Taste and adjust seasoning with salt and pepper as needed.
- Once the chicken is cooked and beautifully glazed, remove from heat.
- To serve, place a portion of rice on each plate, top with the stir-fried chicken, and garnish generously with fresh chopped coriander. Optionally, serve with thinly sliced cucumber for added freshness.
