Ingredients

  • 500g Chicken, cut into pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon oil
  • 1/4 cup yogurt (optional for extra richness)
  • Fresh coriander leaves, chopped (for garnishing)
  • Water as needed

Instructions

  1. Heat oil in a large pot or pressure cooker over medium heat. Add the chopped onions and sauté until golden brown.
  2. Stir in the ginger-garlic paste and green chilies. Sauté for another 1-2 minutes until fragrant.
  3. Add the chopped tomatoes and cook until soft, and the oil separates from the masala.
  4. Now, add the chicken pieces to the pot. Stir-fry for 5-7 minutes until the chicken turns white and is slightly browned.
  5. Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the chicken. Mix well to coat the chicken evenly with the spices.
  6. Add a small amount of water (about 1 cup) and allow the chicken to cook for 10-12 minutes on medium heat, stirring occasionally. If using a pressure cooker, close the lid and cook for 10 minutes.
  7. Add yogurt to the curry and stir well (if using). This step will give the curry a creamy texture and flavor.
  8. Check the consistency of the gravy. If it is too thick, add a little more water to achieve a light, soupy gravy that’s perfect for roti or rice.
  9. Let it simmer for another 5 minutes, allowing the flavors to combine. Once the chicken is fully cooked and tender, adjust salt and spice levels to your taste.
  10. Garnish with freshly chopped coriander leaves.
