Ingredients
- 2 medium eggplants, sliced lengthwise into 1/4-inch thick slices
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup fresh spinach, chopped
- 1/4 cup sun-dried tomatoes, chopped (optional)
- 1 tablespoon garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon olive oil (for brushing eggplant)
- 2 large potatoes, washed and cut into wedges
- 1 tablespoon olive oil (for potatoes)
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Start by preparing the eggplant: Lay the eggplant slices on a baking sheet lined with parchment paper. Brush both sides of the slices with olive oil, then season with salt and pepper. Roast in the preheated oven for 15-20 minutes, or until the eggplant is tender and slightly golden. Remove from the oven and let cool.
