Ingredients:
- 500g chicken breast, thinly sliced
- 1 cup roasted cashew nuts
- 1 tablespoon soy sauce

- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 teaspoon ginger, minced
- 1 tablespoon sesame oil (optional)
- Fresh coriander leaves for garnish (optional)
Instructions:
- Heat a large skillet or wok over medium-high heat and add the olive oil.
- Add the sliced chicken breast and stir-fry until golden brown and cooked through, about 5-7 minutes.
- Remove the chicken from the pan and set it aside.
