Falafel Wraps with Tahini Sauce

Ingredients:
- 1 cup dried chickpeas (soaked overnight)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon baking soda
- Salt and pepper to taste
- Oil for frying
- 4 pita breads
- Fresh vegetables (lettuce, tomato, cucumber, onion)
- For the Tahini Sauce:
- 1/2 cup tahini
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 1/4 cup water
- Salt to taste
Instructions:
- Drain and rinse the soaked chickpeas. Blend them in a food processor with onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper until you get a coarse mixture.
- Shape the mixture into small balls or patties.
- Heat oil in a frying pan and fry the falafel until golden brown. Drain on paper towels.
- To make the tahini sauce, mix tahini, lemon juice, minced garlic, water, and salt until smooth.
- Warm the pita bread and fill with lettuce, tomato, cucumber, onion, falafel, and drizzle with tahini sauce.
- Serve immediately and enjoy!
Tips:
- If you prefer baked falafel, bake them at 375°F (190°C) for 25 minutes, flipping halfway through.
- Add chili flakes to the tahini sauce for a spicy kick.
- For extra crunch, add pickles to the wrap.
