Ingredients:

  • 1 cup dried chickpeas (soaked overnight)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon baking soda
  • Salt and pepper to taste
  • Oil for frying
  • 4 pita breads
  • Fresh vegetables (lettuce, tomato, cucumber, onion)
  • For the Tahini Sauce:
    • 1/2 cup tahini
    • 2 tablespoons lemon juice
    • 1 garlic clove, minced
    • 1/4 cup water
    • Salt to taste

Instructions:

  1. Drain and rinse the soaked chickpeas. Blend them in a food processor with onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper until you get a coarse mixture.
  2. Shape the mixture into small balls or patties.
  3. Heat oil in a frying pan and fry the falafel until golden brown. Drain on paper towels.
  4. To make the tahini sauce, mix tahini, lemon juice, minced garlic, water, and salt until smooth.
  5. Warm the pita bread and fill with lettuce, tomato, cucumber, onion, falafel, and drizzle with tahini sauce.
  6. Serve immediately and enjoy!

Tips:

  • If you prefer baked falafel, bake them at 375°F (190°C) for 25 minutes, flipping halfway through.
  • Add chili flakes to the tahini sauce for a spicy kick.
  • For extra crunch, add pickles to the wrap.
