Telangana Style Chicken Curry (Kodi Kura)
Chef Priya: "Today, we are making the famous Telangana-style chicken curry, also known as Kodi Kura. This curry is known for its deep, rich flavors and spicy kick. Let's dive into this recipe!"
Ingredients:
- 1 kg chicken (cut into pieces)
- 2 onions (finely chopped)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 2-3 green chilies (slit)
- 2 tbsp red chili powder
- 1 tbsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp cumin seeds
- 1 tbsp garam masala
- Fresh coriander (for garnish)
- Salt to taste
- Oil for cooking
- 1 cup tamarind pulp or raw tamarind (optional, for tanginess)
- 1/2 cup water (for consistency)
Steps:
Chef Priya: "Start by heating oil in a large pan. Add cumin seeds and let them crackle. Then, add the chopped onions and sauté until golden brown. This will give your curry a rich flavor."
Chef Priya: "Next, add the ginger-garlic paste and green chilies. Sauté for a minute until fragrant."
Chef Priya: "Now, add the pureed tomatoes, followed by red chili powder, turmeric powder, and coriander powder. Stir well and cook for about 5-7 minutes, until the oil separates from the masala."
Chef Priya: "Once the masala is ready, add the chicken pieces and mix well so they are coated with the spices. Cook for 10-15 minutes until the chicken starts to release its juices."
Chef Priya: "Now, add water to the curry and bring it to a boil. Simmer for 20-25 minutes until the chicken is tender and the gravy thickens. If you like it tangy, add tamarind pulp at this stage."
Chef Priya: "Finish the curry by adding garam masala and fresh coriander leaves. Stir well, and your Telangana-style chicken curry is ready!"
Chef Priya: "Serve this rich and spicy Kodi Kura with rice, roti, or naan. Enjoy the burst of flavors!"
