Chicken Curry with Onions and Light Gravy
Aromatic, flavorful, and easy to make, this Indian-style chicken curry with onions in light gravy is a comforting meal perfect for any occasion.
Ingredients
- 500 grams chicken (bone-in or boneless, cleaned)
- 3 large onions (thinly sliced)
- 3 medium tomatoes (pureed)
- 2 tbsp cooking oil or ghee
- 1 tsp cumin seeds
- 1 bay leaf
- 1-inch cinnamon stick
- 3-4 cloves
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves (chopped, for garnish)
- 2 cups water (adjust for desired gravy consistency)
Instructions
- Heat oil or ghee in a large pan over medium heat.
- Add cumin seeds, bay leaf, cinnamon stick, and cloves. Sauté until aromatic.
- Add the sliced onions and sauté until golden brown.
- Mix in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the turmeric powder, red chili powder, and coriander powder. Stir well.
- Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until lightly browned.
- Pour in the tomato puree and cook for another 5 minutes until the oil begins to separate.
- Add salt and water. Cover and simmer for 20-25 minutes until the chicken is fully cooked and tender.
- Sprinkle garam masala and mix gently.
- Garnish with fresh coriander leaves and serve hot.

This chicken curry pairs wonderfully with steamed rice, chapati, naan, or paratha. Add a side of cucumber salad or raita for a complete meal.
