  • 500g chicken, cut into bite-sized pieces

  • 1 cup coconut milk
  • 2 tbsp vegetable oil

  • 1 cup long beans, chopped
  • 1/2 cucumber, sliced
  • Handful of fresh basil leaves
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/4 cup water or chicken stock
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the dried red chilies and sauté for 1 minute until aromatic.
  3. Add the red curry paste and stir-fry for another 2 minutes.
  4. Slowly add the coconut milk while stirring to combine with the curry paste.

  6. Mix in the fish sauce, sugar, and a pinch of salt. Adjust the seasoning to your taste.
  7. Add the long beans and cucumber slices. Pour in the water or chicken stock and simmer for 5 minutes.
