Chicken Red Curry Recipe
Aromatic, spicy, and rich in flavors, this Chicken Red Curry is a perfect dish for curry lovers.
Ingredients
- 500g chicken, cut into bite-sized pieces
- 2 tbsp red curry paste
- 1 cup coconut milk
- 2 tbsp vegetable oil
- 3 dried red chilies
- 1 cup long beans, chopped
- 1/2 cucumber, sliced
- Handful of fresh basil leaves
- 1 tbsp fish sauce
- 1 tsp sugar
- 1/4 cup water or chicken stock
- Salt to taste
Instructions
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the dried red chilies and sauté for 1 minute until aromatic.
- Add the red curry paste and stir-fry for another 2 minutes.
- Slowly add the coconut milk while stirring to combine with the curry paste.
- Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked.
- Mix in the fish sauce, sugar, and a pinch of salt. Adjust the seasoning to your taste.
- Add the long beans and cucumber slices. Pour in the water or chicken stock and simmer for 5 minutes.
- Turn off the heat and add fresh basil leaves. Stir gently to combine.
- Serve hot with steamed rice or noodles.
